In short

Roman chamomile oil is steam-distilled from the flowers of Chamaemelum nobile. Unlike German chamomile it is rich in esters and gives a sweet, fruity-herbal note.

What Roman Chamomile Oil smells like

Roman chamomile oil has an apple-led, fruity, herbaceous odour. One supplier calls it a concentration of fruity, syrupy, sweet apple with herbaceous and aromatic notes; another sweet-warm fruity-herbal with green apple peel and pear; a glossary warm, fruity and apple-like with a herbaceous hay undertone. Beside German chamomile it is the fruitier one.

German chamomile is more herbal and medicinal, with hay and apple-skin; Roman is the fruitier, apple-led one. (compared directly by a cited source)
Tagetes Oil
Tagetes is a sharper, ketonic green apple; Roman chamomile is a softer, syrupy apple-herb.

An asterisk marks a difference that a cited source states directly. The others compare the published descriptions of each material. Smell varies with grade, supplier and dilution; compare them side by side on blotters before substituting one for another.
